
Sometimes I would spend all day in the kitchen but other times, I just like to whip up something very quickly. This breakfast I literally made it in 10 minutes on Thursday morning.
I am not very exact with measurements so this is a rough guide
Ingredients:
for 1 person
Egg: 2
Milk: (of any kind, I used almond milk) ¼ cup
Cinnamon: half a teaspoon
Olive oil
Sourdough bread: (I used woodfrog soir here) 2 slices
Banana: 1
Mix Berries: half a cup (frozen)
Maple syrup
Method:
In a bowl, whisk eggs, milk and cinnamon together.
Dip slices of bread into the egg mixture, making sure it is coated nicely and the bread is saturated.
Heat a frying pan with little bit of olive oil.
Put slices of bread in the pan and fry for a couple of minutes.
When it is nice and golden, flip it over and wait until you get a nice colour on the other side.
Serve immediately with mixed berries, slices of banana and drizzle of maple syrup.
